Our take on forgotten skills of the kitchen involve a commitment to getting the best out of our produce with classic techniques like Slow cooked lamb ragout, cured ocean trout and slow cooked confit of duck. Head Chef David is passionate about bringing to the table the best expression of these techniques possible.
